Ingredients
• 1 ½ cup Anthony’s Goods Unblanched Almond Flour • 1 ½ cup Anthony’s Goods Dried Apricots • 1 cup dates, pitted • ⅓ cup Anthony’s Goods Shredded Coconut • 3 tbsp Anthony’s Goods Flaxseed Meal • ¼ cup Anthony’s Goods Almond Protein Powder (optional) • ½ tsp Anthony’s Goods Cassia Cinnamon Powder • 1 tsp almond extract • Splashes of almond milk
Instructions
These chewy energy bars keep really well in the fridge. Grab one for breakfast or as a snack to keep you full between meals. 1. Combine all of the ingredients in the bowl of a food process and process until a dough forms. If needed, add little splashes of almond milk to help the machine along. 2. Line an 8x8 baking dish with parchment paper and press the mixture down (as flat as possible) into it. 3. Refrigerate for 30 minutes to allow it to harden, then remove the block and cut it into rectangular bars. Store leftovers in the fridge.
